|My Mom's White Honey Cake|

1.5 cup of sugar
3/4-1 cup of honey
lemon juice and lemon zest of 1/2 fresh lemon
4 table spoons of canola oil
a pinch of soda powder (about 1/4 teaspoon)
1/2 teaspoon of baking powder
white flour about 2.3//4-3 cup
50 grams of chopped nuts mixed with a pinch of flour
apples sliced and pealed 2
1/2 cup of sugar
1 sachet of vanilla sugar
a pinch of cinnamon
before baking, either spread nuts on batter ,
or apples slices mixed with sugar, cinamon and vanilla sugar
or mix all topping ingredients and spread on batter

eggs with sugar in mixer bowl on high speed until light and fluffy
until light and fluffy and batter almost doubles its volume.
warm honey on low fire until boiling bubbles, then pour it slowly to eggs batter while continuously whisking.
add oil gently(while whisking).
lower whisking speed,
add juice and lemon zest,then, flour mixed with soda and baking powders-all while still slowly whisking.
do not over whisk.
pour batter into oiled round 26 cake pan,
or "wonder pan",which i presume is equal to "angle food cake pan",or 2 english cake pans.
spread topping ingredients on batter before baking,
and bake in preheated oven 170 Celsius grades for
about 35-40 minutes,
depending on oven.
